- Cocemos en un litro y medio de agua el achiote, 10 dientes de ajo, media cebolla, tomillo, clavo, orégano, cominos, y el laurel. Licuamos con la mitad del agua que nos resulto (textura pastosa) y reservamos.
- Colocamos las hojas de plátano en un refractario o charola para hornear sobre ellas colocamos la pieza de carne.
- Marinamos la pieza de carne con nuestro adobo, integramos el jugo de las naranjas y el vinagre blanco, agregamos medio litro de agua, la sal de grano a manera de cubrir la superficie perfectamente.
- Envolvemos la carne con el sobrante de las hojas de plátano y sellamos todo con aluminio o vitafilm.
- Pre calentamos el horno a 170° y horneamos durante 60 minutos a 150°. Ya horneada nuestra cochinita la deshebramos.
- Salsa Xnipec., Fileteamos a lo largo (a lo ancho son aros) finamente la cebolla, agregamos el ajo finamente picado, rebanamos finamente los chiles y agregamos, integramos los demás ingredientes, poca sal y listo¡¡
