  1. 1 kg romeritos
  2. 4 o 5 nopales
  3. 1 o 2 papas o papitas de cambray
  4. 50 grs camarones secos
  5. PARA EL MOLE VERDE:
  6. 10 tomates verdes
  7. c/n cebolla
  8. 1 chile verde serrano
  9. 2 dientes ajo
  10. 3 hojas lechuga
  11. c/n hojas de rábano
  12. 6 ramas cilantro
  13. 2 ramas perejil
  14. 1 taza pepitas calabaza
  15. al gusto consomé en polvo o sal

  1. Para hacerlos limpiamos 1 kg de romeritos y los ponemos a cocer en una olla con sal y una pizca de bicarbonato para que conserven el color verde.

    Ponemos a cocer 4 o 5 nopales cortados en cuadritos muy pequeños en agua con sal.

    Ponemos a cocer, también por separado una o dos papas o bien papitas de cambray y una vez cocidas las pelamos y en el caso de que sean grandes las cortamos en cuadritos.

    Ponemos a remojar en agua caliente 50 grs. de camarones secos
  2. Para el MOLE VERDE : en una ollita ponemos a hervir 10 tomates verdes (de los de cáscara), un pedazo de cebolla, un chile verde y dos dientes de ajo.

    Se ponen en la licuadora junto con 3 hojas de lechuga (de la de hojas largas yo usé lechuga sucrine), unas 6 ramas de cilantro, 2 de perejil y si se consiguen, unas hojitas de rábano, se muele y se reserva.

    En un sartén ponemos a saltear 1 taza de pepitas de calabaza (se consiguen en donde venden las botanas vienen en bolsitas o en latas)
  3. Están listas cuando se empiezan a inflar las pepitas. Enseguida las molemos en seco.

    Una vez molidas las ponemos a dorar dos minutos en la cazuela donde vamos a hacer el guiso y ya que dieron una vuelta añadimos los tomates que molimos en la licuadora.

    Si hace falta añadimos consomé.
  4. Se sazona con consomé en polvo y se mueve seguido para evitar que se pegue.

    Una vez hecha la salsa se añaden los romeritos cocidos y escurridos, los nopalitos, camarones secos limpios y las papas.

    Se deja que hierva todo junto a fuego bajo.
