- Vamos haciendo el arroz con leche: ponemos al fuego la leche con la canela y la corteza de limón, cuando esté caliente, pero sin llegar a hervir, añadimos el arroz. Cocemos durante 40 minutos, removiendo muy a menudo, para que no se pegue. Apagamos el fuego, retiramos la canela y el limón y lo dejamos que temple.
- Mientras el arroz va templando, estiramos la masa sobre una superficie enharinada, cubrimos un molde desmontable con ella, la pinchamos y la cubrimos con papel aluminio con garbanzos y la metemos al horno precalentado a 170º, durante unos 10 minutos.
- Y en ese tiempo preparamos el relleno, una vez el arroz esté templado, primero añadimos 2 yemas batidas con 150gr. de azúcar. Y después batimos las 2 claras a punto de nieve fuerte y lo mezclamos a la mezcla anterior, con movimientos envolventes y con mucho cuidado para que coja aire.
- Echamos en relleno en la masa, una vez quitado el papel aluminio con garbanzos, claro. Y llevamos al horno precalentado a 170º durante 30-35 minutos, vigilando, por si se dora demasiado por encima, cubrirlo con papel aluminio.
