- Una vez descabezado y limpio, hierve 5 litros de agua y agrega el maíz nuevamente, una cebolla partida por mitad, 5 dientes grandes de ajo y la sal de grano necesaria (aprox. 4 cucharadas).
- Hierve aproximadamente por tres horas a fuego alto, cuida que el agua no se consuma; poco a poco verás que los granos abrirán como si fueran palomitas de maíz, de la mitad del tiempo en adelante. Cuando falte una hora para llegar a las tres horas, agrega el pollo y deja cocer por 40 min. Saca y desmenuzalo. Mientras desmenuzado el pollo permite que concluya el tiempo de cocción del grano.
- Corta la lechuga en juliana, la cebolla y el rábano en cubitos.
- Para la salsa, solo licuá los chiles serranos con el jugo de los limones, agrega sal yodatada al gusto.
