  3. Cuando la mezcla anterior, la de la leche, toma hervor, agregamos el arroz y dejamos cocinar a fuego bajo. Un truco es revolver en forma de 8 con una cuchara de madera y cada tanto los bordes para evitar que se queme el fondo. Dejamos cocinar hasta que la leche reduzca, sin que llegue a secarse por debajo del arroz. El mismo deberá estar tierno.
  4. Retiramos del fuego, quitamos las ramas de canela y las cáscaras de limón. Agregamos la manteca y dejamos reposar. Cuando la manteca este derretida en su totalidad, mezclamos para integrarla bien a toda la preparación.
